Moon Juice Cookbook: Healthy Recipe for Holidays

    With the holidays just around the corner, we’re all dreaming about the treats we will be eating at the next family or friends party.

   This holiday season, I’m opting for a healthier sweet treat alternative to keep my gut and body in check… at least as much as I can control (who can say no to pie, am I right).

 This recipe I made is from the Moon Juice cookbook, perfect for anyone looking for healthy recipe inspiration such as: vegan cheeses, nut milks, sweet treats, savory snacks, smoothies, juices, and so much more. It has changed the way I cook and has taught me how easy it is to create beautiful recipes that also have amazing health benefits.

   These Strawberry Rose Geranium Bars are so delicious, no one will suspect that they are good for you. They just happen to be refined sugar-free, vegan, and gluten-free with the added benefits of mineralizing deeply and stress relief. Believe me when I say I was stress-FREE after eating these.

 

   The recipe consists of a activated almond flour and oat crust (I used gluten-free oats to make this recipe gluten free) and a strawberry geranium filling sweetened with nature’s candy- dates!

 

  Here’s what you will need to get started:

 

The Moon Juice Cookbook ( I modified the recipe for it to fit what I had in my home if you want exact details on how to make the activated almonds, almond flour, and oat flour I would snag one of these because they are FLYING off the shelves)

 

For the Vanilla Pastry Dough:

 

  • 1 cup activated almond flour
  • 1 cup activated raw almonds, finely ground
  • 3 cups activated oats, finely ground
  • 1 tsp raw vanilla bean powder
  • 1 tsp pink salt
  • ½ cup almond butter
  • 1 cup pure maple syrup

 

Combine all ingredients together in a bowl, cover, and chill in the refrigerator until dough is firm. Roll the dough into a ¼ inch thickness and cut into any shape you desire (leaves for Thanksgiving or trees for Christmas would be perfect for a party). If you have extra dough, you can roll them into balls to have as a sweet snack.

 

For the Strawberry Geranium Jam:

 

  • 1 cup fresh or frozen strawberries
  • 10 Medjool dates, pitted and soaked in water for 30 minutes
  • 1 Tbsp fresh lemon juice
  • ¼ tsp raw vanilla bean powder
  • 2 drops edible geranium essential oil

 

Combine all ingredients in a blender and blend until smooth.

 

Options to thicken filling:

  1. Set your dehydrator at 118 degrees Fahrenheit and transfer filling to wide mouth jar, then dehydrate for 1 to 2 hours depending on desired thickness.
  2. Add filling to a small saucepan and simmer for 30 minutes until thickened. Transfer to a bowl and refrigerate until completely cool, about 1 ½ hours.

 

Spread the amazing strawberry geranium filling on the dough and dehydrate for two hours at 118 degrees Fahrenheit and then cool in the refrigerator.

If you don’t have a dehydrator, no worries, just refrigerate the bars until they are chilled, about 2 hours

 

These bars can be wrapped and stored at room temperature for 1 week or in the freezer for up to 3 months.

 

  I am already thinking about the people I will be gifting these sweet treats to this holiday season. Put them in a cute festive box or wrap them up with some paper and string and I can guarantee whoever you give them to will be happy that you did!
